Quick Tomato and Corn Cucumber Salad

This quick tomato and corn cucumber salad is the perfect easy summer side dish. Fresh, crunchy, and tossed in a simple lime dressing, it comes together in 15 minutes with no cooking required.

Ingredients
  

  • 2 cups cherry tomatoes halved
  • 1 large English cucumber diced
  • cups fresh corn kernels from about 2 ears or thawed frozen corn
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: pinch of chili flakes

Method
 

  1. Halve the cherry tomatoes and place them in a large bowl.
  2. Dice the cucumber into bite-sized pieces and add to the bowl.
  3. If using fresh corn, cut the kernels off the cob. Add corn to the bowl.
  4. Finely chop the red onion and cilantro, and add them to the bowl.
  5. In a small bowl, whisk together olive oil, lime juice, salt, pepper, and chili flakes if using.
  6. Pour the dressing over the vegetables and gently toss to combine.
  7. Let the salad rest for 5 minutes at room temperature to allow flavors to meld.
  8. Stir once more, taste and adjust seasoning if needed, then serve.
