Ingredients
  

  • 4 cups seedless watermelon cut into 1-inch cubes
  • 1 English cucumber thinly sliced
  • 1/2 cup fresh mint leaves roughly torn
  • 4 ounces good quality feta cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • Flaky sea salt for finishing

Method
 

  1. Cut the watermelon into 1-inch cubes, removing any seeds if necessary.
  2. Thinly slice the English cucumber using a sharp knife or mandoline.
  3. In a small bowl, whisk together the olive oil and fresh lime juice until emulsified.
  4. In a large mixing bowl, gently toss the watermelon cubes and cucumber slices with about two-thirds of the dressing.
  5. Arrange the dressed watermelon and cucumber on a serving platter or in a shallow bowl.
  6. Crumble the feta cheese evenly over the top of the salad.
  7. Scatter the torn mint leaves over everything.
  8. Drizzle the remaining dressing over the salad.
  9. Finish with a generous pinch of flaky sea salt just before serving.
