Vegetarian Garlic Butter Rice Recipe

Ingredients
  

  • 1 cup long-grain white rice
  • 2 tablespoons unsalted butter
  • 3 garlic cloves minced
  • 1 3/4 cups vegetable broth or water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil optional
  • 2 tablespoons chopped fresh parsley optional

Method
 

  1. Rinse rice under cold water until water runs mostly clear, then drain well.
  2. In a saucepan, melt butter over medium heat. Add olive oil if using.
  3. Add minced garlic and cook for about 1 minute until fragrant, not browned.
  4. Add the rinsed rice and stir for 1 to 2 minutes to coat the grains.
  5. Pour in vegetable broth or water and add salt and black pepper.
  6. Bring to a gentle boil, then reduce heat to low and cover with a lid.
  7. Let the rice simmer undisturbed for about 15 minutes until liquid is absorbed.
  8. Turn off heat and let it rest covered for 5 minutes.
  9. Fluff gently with a fork and stir in chopped parsley if desired before serving.
