Ingredients
  

  • 20 oz refrigerated cheese tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella pearls
  • 1/2 cup sliced black olives
  • 1/4 cup thinly sliced red onion
  • 1/4 cup shaved Parmesan
  • 1/4 cup fresh basil chopped
  • 1/2 cup Italian dressing store-bought or homemade
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Method
 

  1. Cook tortellini according to package directions until al dente. Drain and rinse under cold water to stop cooking.
  2. In a large bowl, whisk together Italian dressing, red wine vinegar, Dijon mustard, oregano, salt, and pepper.
  3. Add cooled tortellini, cherry tomatoes, mozzarella pearls, olives, red onion, and basil. Toss gently to combine.
  4. Fold in shaved Parmesan. Taste and adjust seasoning.
  5. Cover and refrigerate for at least 30 minutes before serving to let flavors meld.
