Ingredients
  

  • 4 ears fresh sweet corn husked
  • 2 medium English cucumbers diced
  • 1/2 medium red onion thinly sliced
  • 1/2 cup fresh cilantro chopped
  • 1/4 cup fresh lime juice about 2-3 limes
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional: 1/2 cup crumbled feta cheese

Method
 

  1. Bring a large pot of water to boil. Add corn and cook for 5-7 minutes until tender but still crisp.
  2. Remove corn from water and let cool completely. Once cool, cut kernels off the cob using a sharp knife.
  3. In a large mixing bowl, combine corn kernels, diced cucumber, sliced red onion, and chopped cilantro.
  4. In a small bowl or jar, whisk together lime juice, olive oil, honey, salt, and pepper until well combined.
  5. Pour dressing over vegetable mixture and toss gently until everything is evenly coated.
  6. If using feta cheese, sprinkle it over the top and give one final gentle toss.
  7. Let salad rest at room temperature for 15 minutes to allow flavors to develop before serving.
