Ingredients
  

  • 3 cups cooked chicken shredded or diced
  • 1/3 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 celery stalks diced
  • 1/4 cup red onion finely chopped
  • 2 tablespoons pickled jalapeños minced
  • 1/4 cup fresh cilantro chopped
  • Salt and black pepper to taste
  • 1 ripe avocado diced (optional)

Method
 

  1. In a large bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, and lemon juice until smooth.
  2. Add the shredded chicken, diced celery, red onion, minced jalapeños, and chopped cilantro. Stir until everything is well coated.
  3. Season with salt and black pepper to taste. If using avocado, gently fold it in at the end.
  4. Serve immediately or refrigerate for at least 30 minutes to let the flavors meld. Enjoy cold.
