Ingredients
  

  • 2 pounds English or Persian cucumbers thinly sliced
  • 1 teaspoon salt for salting cucumbers
  • 1/4 cup fresh lemon juice from about 2 lemons
  • 1/3 cup extra-virgin olive oil
  • 1 tablespoon honey
  • 1 small garlic clove minced
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 1/4 cup thinly sliced red onion
  • 1/2 teaspoon black pepper
  • Additional salt to taste

Method
 

  1. Slice cucumbers thinly using a mandoline or sharp knife—aim for about 1/8-inch thickness.
  2. Place sliced cucumbers in a colander set over a bowl or sink. Sprinkle with 1 teaspoon salt and toss gently. Let sit for 10 minutes to draw out excess moisture.
  3. Rinse cucumbers under cold water to remove salt, then pat dry thoroughly with a clean kitchen towel or paper towels.
  4. In a small bowl or jar, whisk together lemon juice, olive oil, honey, minced garlic, and black pepper until well combined and slightly emulsified.
  5. In a large mixing bowl, combine dried cucumbers, chopped dill, mint, parsley, and sliced red onion.
  6. Pour the dressing over the cucumber mixture and toss gently until everything is evenly coated.
  7. Let the salad sit at room temperature for about 10 minutes to allow flavors to meld. Taste and add additional salt if needed.
  8. Serve immediately, garnished with extra herbs or lemon slices if desired.
