Ingredients
  

  • 2 large English cucumbers or 4 Persian cucumbers
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 2 green onions sliced thin
  • 1 tablespoon toasted sesame seeds
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon sugar or honey
  • 1 clove garlic minced
  • 1/2 teaspoon red pepper flakes optional

Method
 

  1. Slice the cucumbers into thin rounds or half-moons. If using English cucumbers, no need to peel. Place in a large bowl.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, garlic, and red pepper flakes until sugar dissolves.
  3. Pour the dressing over the cucumbers and toss gently to coat.
  4. Add cilantro, mint, and green onions. Toss again.
  5. Sprinkle with sesame seeds. Serve immediately or refrigerate for 15 minutes to let flavors meld.
