Ingredients
  

  • 2 medium English cucumbers thinly sliced
  • 4 medium ripe tomatoes cut into wedges
  • 1/2 medium red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh dill chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 cup crumbled feta cheese

Method
 

  1. Prepare all vegetables: Slice cucumbers into 1/4-inch rounds. Cut tomatoes into wedges about 1-inch thick. Thinly slice red onion. Chop parsley and dill.
  2. Make the dressing: In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, and pepper until well combined.
  3. Combine ingredients: In a large mixing bowl, add cucumbers, tomatoes, red onion, parsley, and dill. Pour dressing over vegetables.
