Ingredients
  

  • 2 large English cucumbers
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup chopped peanuts optional
  • 2 tablespoons sesame seeds
  • Fresh cilantro or green onions for garnish

Method
 

  1. Spiralize the cucumbers using a spiralizer or a julienne peeler. If you don't have either, you can slice them into thin ribbons with a vegetable peeler. Place the noodles in a large bowl.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger until the honey dissolves.
  3. Pour the dressing over the cucumber noodles and toss gently to coat. Let it sit for 5 minutes to allow the flavors to meld.
  4. Sprinkle with chopped peanuts, sesame seeds, and fresh cilantro or green onions. Serve immediately.
