Ingredients
  

  • 1 lb 16 oz short pasta (rotini or fusilli)
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup black olives sliced
  • 1/2 cup shredded Parmesan cheese
  • 3/4 cup Italian dressing store-bought or homemade
  • 2 tablespoons Salad Supreme seasoning
  • 1 tablespoon red wine vinegar optional

Method
 

  1. Cook pasta according to package directions until al dente. Drain and rinse under cold water to stop cooking.
  2. While pasta cooks, prep vegetables: halve tomatoes, dice cucumber, slice onion and olives.
  3. In a large bowl, whisk together Italian dressing, Salad Supreme seasoning, and red wine vinegar if using.
  4. Add cooled pasta and vegetables to the bowl. Toss well to coat.
  5. Fold in shredded Parmesan. Cover and refrigerate for at least 30 minutes before serving to let flavors meld.
