Ingredients
  

  • 2 medium English cucumbers or 3 Persian cucumbers, thinly sliced
  • 3 ripe but firm avocados peeled and cubed
  • ¼ cup fresh lime juice from about 2-3 limes
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup chopped fresh cilantro

Method
 

  1. Slice cucumbers into ¼-inch thick half-moons. If using regular cucumbers with large seeds, halve lengthwise and scoop out seeds first.
  2. Cut avocados in half, remove pits, and cube into bite-sized pieces.
  3. In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper until well combined.
  4. In a large mixing bowl, gently combine cucumber and avocado pieces.
  5. Pour dressing over vegetables and toss carefully using a rubber spatula or your hands to avoid mashing the avocado.
  6. Add chopped cilantro and give one final gentle mix.
  7. Let salad rest for 5-10 minutes before serving to allow flavors to meld.
  8. Taste and adjust seasoning with additional salt or lime juice if needed.
