Mediterranean Cucumber Salad with Feta, Tomato, and Herbs

Ingredients
  

  • 2 medium English cucumbers thinly sliced
  • 1 pint cherry tomatoes halved
  • 1/2 small red onion thinly sliced
  • 1/2 cup fresh parsley leaves chopped
  • 1/4 cup fresh mint leaves chopped
  • 4 ounces block feta cheese
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 small garlic clove minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large mixing bowl, combine the sliced cucumbers, halved cherry tomatoes, sliced red onion, chopped parsley, and chopped mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper until well combined.
  3. Pour the dressing over the vegetable mixture and gently toss until everything is evenly coated.
  4. Crumble the block of feta cheese over the top of the salad.
  5. Let the salad sit at room temperature for about 5 minutes to allow the flavors to meld before serving.
