Marinated Onion Cucumber Salad

Ingredients
  

  • 2 large English cucumbers or 3 medium regular cucumbers
  • 1 large red onion
  • 1/2 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tablespoons granulated sugar or honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh dill chopped
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Wash and thinly slice the cucumbers into rounds about 1/8-inch thick. If using regular cucumbers, peel them first.
  2. Thinly slice the red onion into half-rings.
  3. In a large bowl, whisk together apple cider vinegar, olive oil, sugar, salt, black pepper, and red pepper flakes (if using) until the sugar dissolves.
  4. Add the sliced cucumbers, red onion, and chopped dill to the bowl. Toss well to coat everything evenly.
  5. Cover the bowl and refrigerate for at least 30 minutes (or up to 24 hours) before serving. Stir once or twice during marinating if possible.
  6. Serve cold or at room temperature. Enjoy!
