Method
- In a large bowl, whisk together rice vinegar, sugar, salt, pepper, and olive oil until sugar is dissolved.
- Add sliced cucumbers and red onion to the bowl. Toss well to coat with dressing.
- Add chopped dill and parsley, and toss again.
- Let the salad rest at room temperature for 15 minutes to allow flavors to meld.
- Transfer to an airtight container and refrigerate until ready to serve. Serve chilled or at room temperature.
