Fresh Tomato Cucumber Salad for Weeknights

Ingredients
  

  • 4 ripe Roma or vine-ripened tomatoes chopped
  • 1 English cucumber halved and sliced
  • 1/2 small red onion thinly sliced
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh mint chopped

Method
 

  1. In a large bowl, combine chopped tomatoes, sliced cucumber, and thinly sliced red onion.
  2. Drizzle with olive oil and red wine vinegar. Sprinkle with oregano, salt, and pepper.
  3. Toss gently until everything is evenly coated.
  4. Let the salad rest at room temperature for 5-10 minutes to allow flavors to meld.
  5. Just before serving, stir in fresh parsley and mint. Taste and adjust seasoning if needed.
  6. Serve immediately or refrigerate for up to 2 hours.
