Ingredients
  

  • 1 large English cucumber or 2 Persian cucumbers, thinly sliced
  • 1 cup frozen peas thawed and patted dry
  • 1/2 cup roasted salted peanuts roughly chopped
  • 1/4 cup fresh mint leaves chopped
  • 3 tablespoons fresh lime juice from about 1 1/2 limes
  • 1 teaspoon lime zest
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey or agave syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a small bowl, whisk together lime juice, lime zest, olive oil, honey, salt, and pepper until emulsified.
  2. In a large bowl, combine sliced cucumber, thawed peas, chopped peanuts, and mint.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Let the salad rest for 5 minutes to allow flavors to meld.
  5. Toss again lightly, then serve immediately or refrigerate until ready.
