Date Dessert Recipe – Soft Caramel Date Cake

Ingredients
  

  • 1 1/2 cups pitted dates
  • 1/2 cup warm water
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans optional

Method
 

  1. Place pitted dates in a bowl and pour warm water over them. Let sit for 10 minutes to soften.
  2. Mash or blend softened dates into a thick paste.
  3. In a bowl, whisk eggs until slightly frothy.
  4. Add melted butter, brown sugar, and vanilla extract, then mix until smooth.
  5. Stir in the date paste until fully combined.
  6. In a separate bowl, mix flour, baking soda, and salt.
  7. Gradually fold dry ingredients into the wet mixture until just combined.
  8. Fold in chopped nuts if using.
  9. Preheat oven to 350°F (175°C) and grease an 8-inch baking pan.
  10. Pour batter into the pan and spread evenly.
  11. Bake for 25 to 30 minutes until a toothpick inserted comes out mostly clean.
  12. Let cool for at least 15 minutes before slicing and serving.
