Ingredients
  

  • 2 medium English cucumbers sliced into 1/4-inch rounds
  • 3 medium ripe tomatoes cut into wedges
  • 1/2 medium red onion thinly sliced
  • 1/4 cup chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Method
 

  1. In a large bowl, combine the sliced cucumbers, tomato wedges, and red onion.
  2. Add the chopped dill and parsley to the bowl.
  3. In a small bowl or measuring cup, whisk together the red wine vinegar, olive oil, salt, and pepper until well combined.
  4. Pour the dressing over the vegetables and herbs.
  5. Gently toss everything together until evenly coated.
