Cucumber Tomato Avocado Salad with Lemon and Sea Salt

Ingredients
  

  • 1 large English cucumber or 2 smaller cucumbers, chopped into bite-sized pieces
  • 2 medium ripe tomatoes chopped into wedges
  • 1 ripe avocado pitted and chopped into chunks
  • 1/4 small red onion thinly sliced
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt plus more to taste
  • 1/4 teaspoon black pepper

Method
 

  1. Wash the cucumber and tomatoes thoroughly under cold water.
  2. Chop the cucumber into bite-sized pieces and place them in a large mixing bowl.
  3. Cut the tomatoes into wedges and add them to the bowl with the cucumber.
  4. Slice the red onion thinly and add it to the bowl.
  5. Chop the parsley and add it to the bowl.
  6. Cut the avocado in half, remove the pit, and scoop out the flesh. Chop it into chunks and add to the bowl.
  7. In a small bowl, whisk together the lemon juice, olive oil, sea salt, and black pepper until well combined.
  8. Pour the dressing over the salad ingredients in the large bowl.
  9. Gently toss everything together until the vegetables are evenly coated with the dressing.
  10. Let the salad sit for 5-10 minutes to allow the flavors to meld before serving.
