Cucumber Caprese Salad with Tomato, Mozzarella, and Basil

A refreshing twist on classic Caprese salad with crisp cucumber adding extra crunch. This easy recipe comes together in minutes for a light, fresh side dish or light meal.

Ingredients
  

  • 1 large English cucumber about 12 ounces
  • 2 medium ripe tomatoes about 1 pound total
  • 8 ounces fresh mozzarella balls ciliegine or bocconcini
  • 1/2 cup fresh basil leaves
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Method
 

  1. Wash and dry the cucumber and tomatoes. Slice the cucumber into 1/4-inch thick rounds.
  2. Slice the tomatoes into 1/4-inch thick slices. If using cherry tomatoes, halve them instead.
  3. Drain the mozzarella balls if they're packed in liquid. If using larger mozzarella, tear into bite-sized pieces.
  4. Arrange the cucumber slices, tomato slices, and mozzarella on a large serving platter or shallow bowl.
  5. Scatter the fresh basil leaves over the arranged ingredients.
  6. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
  7. Drizzle the dressing evenly over the salad.
  8. Let the salad sit for 5 minutes to allow the flavors to meld before serving.
