Ingredients
  

  • 2 medium crisp apples Honeycrisp or Granny Smith, cored and thinly sliced
  • 1 large English cucumber thinly sliced into half-moons
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh dill chopped
  • 2 tablespoons fresh mint chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted sliced almonds optional
  • For the dressing:
  • 3 tablespoons fresh lemon juice about 1 lemon
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a small bowl or jar, whisk together lemon juice, olive oil, honey, Dijon mustard, salt, and pepper until emulsified. Set aside.
  2. In a large bowl, combine sliced apples, cucumber, red onion, dill, and mint.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Sprinkle crumbled feta and toasted almonds (if using) on top.
  5. Serve immediately for maximum crunch.
