Ingredients
  

  • 3 cups cooked rotisserie chicken shredded (about 1 whole chicken)
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup finely diced celery about 2 stalks
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup dried cranberries or chopped pecans

  1. Shred the rotisserie chicken into bite-sized pieces, discarding skin and bones.
