Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente (usually 8-10 minutes).
While the pasta cooks, make the dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well combined.
Drain the cooked pasta and rinse under cold water until completely cool. Shake off excess water and transfer to a large mixing bowl.
Add diced cucumbers, chopped red onion, dill, and parsley to the bowl with the pasta.
Pour the dressing over the pasta mixture and toss gently until everything is evenly coated.
Taste and adjust seasoning with additional salt or lemon juice if needed.
Cover and refrigerate for at least 15 minutes to allow flavors to meld before serving.
