Method
- Cook pasta according to package directions until al dente. Drain and rinse under cold water to cool; set aside.
- In a small bowl, whisk together mayonnaise, grated Parmesan, lemon juice, Dijon mustard, garlic, anchovy paste (if using), salt, and pepper until smooth.
- In a large bowl, combine cooled pasta, chicken, romaine lettuce, shaved Parmesan, and croutons.
- Pour dressing over salad and toss gently until everything is evenly coated.
