California Roll Cucumber Salad with Avocado and Sesame

Ingredients
  

  • 2 large English cucumbers thinly sliced into half-moons
  • 1 teaspoon kosher salt
  • 2 ripe but firm avocados diced
  • 8 ounces imitation crab sticks shredded
  • 3 green onions thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon mayonnaise
  • 2 teaspoons toasted sesame seeds
  • Freshly ground black pepper to taste

Method
 

  1. Place the sliced cucumbers in a colander and toss with kosher salt. Let them sit for 10 minutes to draw out excess moisture.
  2. While the cucumbers drain, whisk together rice vinegar, soy sauce, sesame oil, honey, and mayonnaise in a small bowl until smooth.
  3. Rinse the cucumbers under cold water and pat them very dry with paper towels or a clean kitchen towel.
  4. In a large mixing bowl, combine the dried cucumbers, diced avocado, shredded imitation crab, and green onions.
  5. Pour the dressing over the salad and gently toss until everything is evenly coated.
  6. Sprinkle with toasted sesame seeds and black pepper, then refrigerate for at least 15 minutes to let the flavors meld.
  7. Taste and adjust seasoning if needed before serving chilled.
