Method
- Slice cucumbers into thin rounds, about 1/8-inch thick. If using regular cucumbers, peel them first.
- Place cucumber slices in a large bowl. Add sliced red onion and mint leaves.
- In a small bowl, whisk together olive oil, vinegar, honey, salt, and pepper until emulsified.
- Pour dressing over cucumber mixture and toss gently to coat.
- Let sit for 5 minutes to allow flavors to meld. Serve immediately or refrigerate for up to 2 hours.
