Berry Crisp

Ingredients
  

  • 4 cups mixed berries fresh or frozen
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ cup unsalted butter cold and cubed
  • ½ teaspoon cinnamon optional
  • Pinch of salt

Method
 

  1. Preheat oven to 180°C (350°F).
  2. In a large bowl, toss berries with granulated sugar, lemon juice, cornstarch, and vanilla extract until evenly coated. Transfer to a baking dish and spread evenly.
  3. In another bowl, combine flour, oats, brown sugar, cinnamon, and salt. Add cold butter cubes and work into the mixture using fingers or a fork until crumbly.
  4. Sprinkle topping evenly over berries, leaving some gaps for steam to escape. Do not pack down.
  5. Bake for 35-40 minutes, until topping is golden brown and berries bubble around edges.
  6. Let rest for at least 10 minutes before serving. Serve warm.
